Just wanted to say a big thank you for giving our students the opportunity to work on the capstone project with you. Your support, responsiveness, and collaboration throughout made a huge difference. Even though my main communication was with the students, I’ve been closely following their progress and updates along the way. From everything I saw and heard, they truly enjoyed working with you and appreciated how open and engaged you were during the whole process. It was a great learning experience for them. Thanks again for being such a great partner — we really appreciate it!

As part of this project, this was a really valuable and meaningful experience for me. It enabled me to link academic knowledge with practical experiences, specifically regarding food security and sustainability. However, one of the first challenges we faced was working together entirely online. It was quite difficult to work together at first and communicate in a virtual environment. Yet this also came to be an enriching learning moment. It required me to develop new skills such as remote collaboration, adaptability and digital communication, all of which have proved critical in the working world today. The process allowed me to not only further develop my teamwork and communication skills from working with my peers, but also from interacting with the employer. It was the kind of open and supportive environment that encouraged sharing ideas, initiative and learning from one another. And, I offer a humble thank you to Jenny for allowing me and my team to be part of this project. Your guidance and encouragement created an environment where we felt inspired to contribute, where our input was valued and respected. Once again, I just want to say that I appreciate all the time we have collaborated together.
